A new report from Technomic explores the occasions and opportunities for adding new, innovative flavours to menus.Most consumers want innovation at least occasionally, yet favourite dishes are also key to appeal to consumers, Technomic said in a news release. Operators can create an experience or story around new flavours to help drive consumer interest and stand out among the competition.The 2019 Canadian Flavour Consumer Trend Report explores the occasions and opportunities for adding new, innovative flavours to menus.

“To pique consumer interest, operators should create a balanced menu to ensure dishes remain approachable and still drive cravings,” explains Natalie Barone, research analyst at Technomic. “Adding unique flavours to familiar, craveable dishes can help combine familiarity and innovation in a way that resonates with consumers.”

The report highlights the following trends:

  • 65 per cent of consumers like trying new flavours from time to time
  • 52% of consumers are likely to try new flavours at full-service restaurants
  • 59% of consumers define a unique flavour as one they have never had before
  • 47% of consumers prefer very spicy foods
